Pork Larb Lettuce Cup

Larb is ground meat salad from either Lao or Thai.  You can use ground beef, chicken or pork.  ground pork is pan-cooked, then stirred together with a fish sauce and honey. Wrap it with lettuce and fresh herbs. Toasted rice powder is  gives the dish nutty flavor and crunch. It’s a great appetizer or light meal.

Ingredients

  • 1/2 pound ground pork

  • 2 TBS diced onion (or green onion)

  • 1 tsp olive oil

  • 1/2 cup herbs (mint, cilantro, and thai basil)

  • 1/2 tsp honey

  • 1/2 tsp fish sauce

  • 1/2 head ice burg lettuce (washed separated)

  • 1 TBS roasted rice (optional)

  • salt and pepper

Directions

  • Heat mid size frying pan over med heat and add some oil. Cook onion and ground pork until done.
  • Add honey, fish sauce and salt pepper. Set aside.
  • Cook rice (grain) over slow heat and when the rice becomes white, remove from the heat. Cool it. Put the rice in the spice mill and grind fine.
  • Wash lettuce and other herbs. Pat dry well.
  • In a bowl, put the ground pork and put rice over. Wrap the pork with lettuce and add herbs to eat.
