Corn Salsa

I got this recipe from my neighbors in Hawaii. She called this salsa “Tammy’s salsa.” Surprisingly it is very easy to make. The secret is Kraft Italian dressing and white shoe peg corns. I make this dish for a big party and everyone loves it.

Ingredients

  • 1 can Shoe peg corn (drained)

  • 1/4 can black olive (diced) small can

  • 1/2 cup Diced cherry tomatoes (drained)

  • 1/4 cup Cilantro leaves (diced)

  • 1 TBS diced green onion

  • 1/2 tsp hot jalapeno (can)

  • black pepper

  • 1/3 cup Italian dressing

Directions

  • Open the corn can and drain well.
  • Dice cherry tomatoes and drain well.
  • Dice green onions and cilantro leaves.
  • Dice black olives.
  • In a large bowl, combine all ingredients, and add dressing and pepper. Mix well
  • Chill in the fridge and serve with crispy tortilla chips.

Notes

  • You can add more jalapeno to make it hot. If jalapeno is not available use chili sauce like Tabasco.
