Ajillo - Spanish Garlic Shrimp

One of the popular Spanish tapas.

Beautiful plump shrimp and savory garlic oil sauce with doubles as an awesome dipping sauce for crusty baguette toast. It is easy to make:  put all ingredients in a pot and cook about 5 minutes, and it’s ready.

If you are allergic to shrimp, you can use mushrooms instead.

Ingredients

  • 10 med size Frozen (thawed) Shrimp

  • 3 cloves Garlic

  • 1/2 cup Olive oil

  • 1 TBS Fresh Parsley

  • Hot chili flakes , salt and pepper

  • 1/4 cup White wine

  • 1/4 tsp Chicken stock flakes

Directions

  • Thaw out the frozen shrimp, add some white wine. (for fresh shrimp, clean and remove shells and devein)
  • In a medium pot, put some olive oil and cook shrimp about 1 min.
  • Add the rest of the olive oil, garlic, chicken stock, and simmer about 10 min.
  • Taste and add chili, salt and pepper.
  • This dish is also a great dipping sauce for French bread.

Notes

  • This dish can be served hot or at room temp. Add mushrooms if you like.
