Chicken Souvlaki - Greek chicken

A healthy Greek dish called “souvlaki”: Meats are skewered and grilled.  They are often served with fresh salad and wrapped in a pita bread. It is also eaten with yogurt sauce called tzatziki.

Grilling is the best cooking method, If you have a barbecue set. If you are frying in a pan or broiling in the oven, I recommend high heat.  

Add some salad, such as cucumbers, tomatoes, black olives or lettuce and it is refreshing and healthy.

Chicken Souvlaki

Ingredients

  • 1 Chicken breast

  • 1 garlic (grate or chopped)

  • 1 TBS lemon juice

  • 1 TBS fresh parsley

  • 1 TBS olive oil

  • Salt Pepper

  • 1/2 tsp Dry Oregano

Directions

  • Marinade chicken first. (this takes over 2 hours.) Wash and cut chicken in 1 inch blocks. Salt pepper. In a zip lock bag, put diced garlic, lemon juice, diced parsley, oregano and olive oil.
    Add chicken and marinate over 2 hours (overnight can be okay too.)
  • Skewer about 4 chicken blocks on one stick.
  • Take out chicken meat from the bag and discard the marinated juice and bag.
  • Put a large frying pan on high heat and cook chicken. Caramelize well.
    When it is done, remove from the pan.
  • Eat with Tzatziki sauce. (recipe below) Garnish with salad.

Notes

  • Grilling is the best for this recipe. When grilling, make sure your skewers are stainless. If you are using wooden skewers, soak them in water before skewering chicken and cooking.
