Japanese Vegetarian Pasta

This is a very popular summer vegetarian recipe and great for a get together. Nametake (na-may-ta-kay) are soy sauce flavored enoki mushrooms that come jar (see picture). This is the main flavor of this spaghetti salad, but other ingredients such as Shiso leaves, daikon radish and seaweed adds interesting texture and taste to the salad. Enjoy.

Place in the fridge to make it cold before serving (about 1 hour.)

Ingredients

  • 2 servings Spaghetti

  • 1 jar Nametake (Japanese soy-sauce taste Enoki mushroom jar)

  • 1/4 cup Wakame seaweed (soak in water and drain)

  • 1/4 cup Japanese radish (grated and water squeezed out)

  • Some Shiso leaves and green onions (diced)

  • 1 bottle Japanese soba noodle sauce

Directions

  • Prepare the Nametake, wakame (seaweed) and vegetables first. Soak seaweed in water about 10 minutes and drain.
  • Peel the outside skin of the Japanese radish (Daikon) and grate with a grater. Squeeze juice out.
  • Wash shiso leaves and green onions and dice finely.
  • Cook spaghetti as instructed on the package. Drain and cool.
  • In a large flat container, put spaghetti in the middle and decorate with other ingredients (wakame, nametake, radish, green onions and shiso leaves).
  • Keep in the fridge about 1 hour before serving.
  • Pour Japanese noodle sauce over top.
