Okinawan Potato Mash

Okinawan purple potato is rather dry, but making it mash potato, it brings the best of Okinawan potato sweetness and creaminess. You can even make a tasty dessert too.

Ingredients

  • 2 large Okinawan sweet potato

  • 1 TBS butter

  • 1/4 cup cream

  • salt pepper

Directions

  • Wash, dice about 3 inches size, and boil potatoes in a large pot until done. (water becomes super black.)
  • Once done, drain and remove the skins. Mash well.
  • Add cream, butter and salt and pepper.
  • Eat with sour cream or as is.
