A comfort food. Simple vegetable stew, but I serve this as an appetizer with bread or crackers. Use any vegetables in the fridge.

Ingredients

  • 1 small zucchini

  • 1/2 small onion

  • 1 small red paprika

  • 2 TBS Olive oil

  • 1 clove garlic

  • 1/2 cup chicken stock

  • some dried thyme, parsley and basil

  • salt and pepper

Directions

  • Dice zucchini, paprika, onion and garlic.
  • Heat a med size pot and add olive oil.
  • Cook all vegetables until tender.
  • Add chicken stock, dried herbs and cook about 20 min on medium heat.
  • Salt pepper to taste.
  • Eat with bread or crackers.

Notes

  • You can use eggplant and tomatoes for this recipe. Onion is a must. Serve cold or hot.
