Tortilla - Spanish Potato Omelet

Popular Spanish tapas, Tortilla de patatas.

It’s just a potato omelet, but it’s a comfort food.

When we traveled to Barcelona, we tried several famous tortillas. All are slightly different, but all are good. 

You can serve it cold or warm.

  1. Use a small frying pan to cook unless you are making a huge crowd.
  2. Cook in low to medium heat once you put the eggs.

Ingredients

  • 1 medium Potato diced

  • 4 Eggs

  • 1/4 medium onion chopped

  • salt pepper

  • Olive oil

Directions

  • Peel and cut potatoes (1/3 inch cubes). Boil potatoes until slightly soft. Drain.
  • Chop onions.
  • In a med sized frying pan, add olive oil and cook potatoes until soft. Add onions and cook until tender.
  • Crack eggs in a bowl and whisk well.
  • Slowly put the egg mix in the frying pan. Reduce heat and cook slowly.
  • When the bottom is browned, flip the omelet and cook the top side until golden.
  • Serve with aioli sauce. (aioli sauce recipe below)

Notes

  • Use a pot lid with handle to flip the omelet.
  • Aioli Sauce: Grind one small clove of garlic, microwave 30 seconds and cool. Add 2 TBS mayonnaise and salt, and mix well. Serve with egg omelet.
